Ingredients
1 ¼ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
½ cup (1 stick) unsalted butter, softened
½ cup granulated sugar
½ cup packed brown sugar
½ cup creamy peanut butter
1 large egg
1 tsp vanilla extract
Optional:
Crushed roasted peanuts (for extra crunch)

Instructions
Mix dry ingredients In a small bowl, whisk together flour, baking soda, and salt.
Cream the butter & sugars In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.
Add peanut butter & egg Mix in peanut butter, egg, and vanilla extract until fully combined.
Combine & chill Gradually mix in the dry ingredients until a dough forms. Chill for 20–30 minutes if dough feels too soft.
Shape & pattern Scoop dough into 1-inch balls and place on a parchment-lined baking sheet. Flatten each ball slightly with a fork, making a criss-cross pattern.
Bake Bake at 350°F (175°C) for 10–12 minutes or until edges are golden. Let cool on pan for 5 minutes before transferring to a wire rack.
