A bold, seasoned meat stack roasted until tender and crisped, then shaved thin for that iconic doner-style bite—served in wraps, pita, or over rice.

Flavor Profile Savory

Bold, spiced, and herbaceous with crispy edges.

Ingredients

For the meat:

  • 1 lb ground beef or lamb (or a mix)

  • 1 small onion, grated

  • 2 cloves garlic, minced

  • 1 tbsp Greek yogurt

  • 1 tbsp tomato paste

  • 1 tsp salt

  • 1 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp black pepper

  • 1/4 tsp cayenne or chili flakes (optional)

  • 1/4 tsp cinnamon (optional for warmth)

Optional:

  • 1 tsp smoked paprika for depth

  • 1 tsp oregano or thyme

Instructions

  1. Mix and marinate:
In a bowl, combine all meat ingredients. Mix well (knead like dough) until sticky and fully incorporated. For best flavor, refrigerate for at least 1 hour (or overnight).

  2. Shape and bake:
Preheat oven to 375°F (190°C). Shape the meat into a thick log or press into a loaf pan. Bake uncovered for 35–45 minutes, or until internal temp reaches 160°F and edges are browned.
Optional Grill Method: Thread flattened meat onto skewers and grill over medium-high heat, rotating until charred and cooked through.

  3. Rest and slice:
Let the meat rest for 10 minutes, then slice thinly across the grain using a sharp knife.

Serving Suggestions

  • Wrap it: in warm pita or lavash with lettuce, tomato, red onion, and garlic yogurt or tahini sauce

  • Plate it: over rice with grilled veggies and tzatziki

  • Low-carb: wrapped in lettuce or served on a salad with lemony dressing

  • Toppings: sumac onions, pickled cabbage, spicy sauce, or feta
