Ingredients

For the Cake:

  • 2 cups almond flour

  • 1/2 cup coconut flour

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 4 large eggs (room temperature)

  • 1/3 cup melted coconut oil or unsalted butter

  • 3/4 cup unsweetened almond milk

  • 2 tsp vanilla extract

  • 3/4 cup granulated monk fruit sweetener or erythritol

For the Frosting:

  • 8 oz cream cheese (softened)

  • 1/4 cup unsalted butter (softened)

  • 1/2 cup powdered monk fruit sweetener

  • 1 tsp vanilla extract

  • Pinch of salt

Optional Add-Ons

  • Top with fresh berries or sugar-free sprinkles

  • Add a sugar-free jam layer between cakes

  • Use food coloring (natural or sugar-free) for a fun swirl in the batter or frosting

Instructions

Cake:

  1. Preheat oven to 350°F (175°C). Grease two 8-inch cake pans and line the bottoms with parchment paper.

  2. Whisk dry ingredients: almond flour, coconut flour, baking powder, and salt.

  3. In a separate bowl, whisk wet ingredients: eggs, sweetener, almond milk, vanilla, and melted coconut oil.

  4. Combine wet and dry ingredients until smooth. Let the batter sit for 2–3 minutes to thicken slightly.

  5. Divide and bake in the prepared pans for 22–26 minutes, or until a toothpick comes out clean.

  6. Cool completely before frosting.

Frosting:

  1. Beat cream cheese and butter together until smooth and creamy.

  2. Add powdered sweetener, vanilla, and salt. Beat again until fluffy.

  3. Chill frosting if too soft before spreading.
