Banana Protein Pancakes

Ingredients:
1 ripe banana (mashed)
2 eggs
1/2 cup rolled oats (or oat flour)
1 scoop (about 25g) protein powder (vanilla or unflavored)
1/4 cup milk (dairy or non-dairy like almond/soy)
1/2 tsp baking powder
1/2 tsp cinnamon (optional)
Pinch of salt
Butter or oil for cooking
Optional Add-ins:
Blueberries, chocolate chips, or chopped nuts
1 tsp vanilla extract

Blend ingredients:
Add banana, eggs, oats, protein powder, milk, baking powder, cinnamon, and salt to a blender. Blend until smooth. Let the batter sit for 5 minutes to thicken slightly.Heat the pan:
Heat a non-stick skillet over medium heat. Add a little oil or butter.Cook pancakes:
Pour batter into small pancakes (about 1/4 cup each). Cook 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes.Serve:
