Banana Protein Pancakes

Fluffy, wholesome pancakes packed with ripe bananas and a protein boost to fuel your day. Naturally sweet and satisfying, they’re the perfect healthy twist on a classic breakfast favorite.

Ingredients:

  • 1 ripe banana (mashed)

  • 2 eggs

  • 1/2 cup rolled oats (or oat flour)

  • 1 scoop (about 25g) protein powder (vanilla or unflavored)

  • 1/4 cup milk (dairy or non-dairy like almond/soy)

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon (optional)

  • Pinch of salt

  • Butter or oil for cooking

Optional Add-ins:

  • Blueberries, chocolate chips, or chopped nuts

  • 1 tsp vanilla extract

Instructions:

  1. Blend ingredients:
    Add banana, eggs, oats, protein powder, milk, baking powder, cinnamon, and salt to a blender. Blend until smooth. Let the batter sit for 5 minutes to thicken slightly.

  2. Heat the pan:
    Heat a non-stick skillet over medium heat. Add a little oil or butter.

  3. Cook pancakes:
    Pour batter into small pancakes (about 1/4 cup each). Cook 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes.

  4. Serve:
    Stack them up and top with your favorites – yogurt, berries, peanut butter, or maple syrup.
