  • 4 slices cheese (cheddar, American, or other melty cheese)

  • 2 tbsp butter, softened

For the Tomato Soup

  • 2 tbsp olive oil or butter

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 cup vegetable or chicken broth

  • 1 tsp sugar

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ½ cup heavy cream or milk (optional)

  • Fresh basil (optional, garnish)

Instructions

  • Step One Sauté onion and garlic in olive oil or butter over medium heat until softened, about 5 minutes.

  • Step Two Add crushed tomatoes, broth, sugar, salt, and pepper. Simmer for 15 minutes, stirring occasionally.

  • Step Three Blend the soup with an immersion blender (or carefully in a regular blender) until smooth. Stir in cream or milk if using. Keep warm.

  • Step Four Butter one side of each bread slice. Place cheese between two slices, butter side out. Cook in a skillet over medium heat until golden and melty, about 3 minutes per side.

  • Step Five Serve hot grilled cheese with tomato soup, garnished with basil if desired.
