Also known as the internet’s favorite comfort pasta, this dish is creamy, rich, and has a nice chili kick. Gigi posted it during lockdown, and it instantly took off.

A creamy tomato‑vodka sauce spiked with chili flakes—simple, elegant, and just 20 minutes.

Ingredients:

  • ¼ cup olive oil

  • 1 small shallot, finely chopped

  • 2 cloves garlic, minced

  • ½ tsp crushed red pepper flakes (adjust to taste)

  • ¼ cup tomato paste

  • ½ cup heavy cream

  • 1 tbsp vodka (optional but recommended)

  • 1 tbsp butter

  • Salt & pepper to taste

  • ½ lb pasta (shells or rigatoni work well)

  • Fresh basil (optional)

  • Freshly grated Parmesan cheese (for topping)

Tips:

  • Want more heat? Add extra red pepper flakes or a drizzle of chili oil.

  • Vegan? Sub the cream for coconut milk and skip the butter or use a vegan version.

Instructions:

  1. Sauté aromatics:
    Heat olive oil in a large skillet over medium heat. Add the shallot and garlic and cook until soft and fragrant (2–3 minutes).

  2. Build the base:
    Stir in the tomato paste and cook for 2–3 minutes, until it deepens in color. Add red pepper flakes and stir.

  3. Deglaze and cream:
    Pour in vodka to deglaze the pan (or skip if not using). Let it simmer for 1 minute.
    Add the heavy cream and stir until the sauce becomes smooth and orange.

  4. Boil pasta:
    In a separate pot, cook pasta according to the package instructions. Reserve ¼ cup of the pasta water before draining.

  5. Finish the sauce:
    Add butter to the sauce, stir until melted. Add in a splash of pasta water to loosen it slightly. Season with salt and pepper to taste.

  6. Combine:
    Toss the cooked pasta in the sauce. Stir until well coated. Simmer together for 1–2 minutes.

  7. Top & serve:
    Plate it up, sprinkle with Parmesan, and add fresh basil if you like.
