Dalgona Coffee Pancakes

Fluffy, golden pancakes topped with a cloud of whipped, creamy Dalgona coffee foam — the perfect sweet and caffeinated breakfast treat that’s as fun to make as it is to eat.
Ingredients:
For the pancakes:
1 ½ cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
¼ tsp salt
1 ¼ cups milk
1 egg
3 tbsp melted butter or vegetable oil
1 tsp vanilla extract
For the Dalgona coffee foam:
2 tbsp instant coffee powder
2 tbsp sugar
2 tbsp hot water
Instructions:
Make the pancakes:
In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, whisk milk, egg, melted butter, and vanilla.
Combine wet and dry ingredients gently until just mixed (some lumps are okay).
Heat a non-stick pan over medium heat, grease lightly.
Pour batter (about ¼ cup per pancake) and cook until bubbles form on top, then flip and cook until golden. Repeat.
Whip the Dalgona coffee:
In a bowl, combine instant coffee, sugar, and hot water.
Using a hand mixer or whisk, whip vigorously for 3-5 minutes until light, fluffy, and creamy.
Assemble:
Stack pancakes on a plate.
Dollop or spread generous amounts of the whipped Dalgona coffee foam on top of the stack.
Optional: drizzle with maple syrup or sprinkle cocoa powder.
